Mango Avocado Salsa with Shrimp Recipe

Ingredients:

For the salsa:

  • 2 ripe mangoes, peeled and diced

  • 2 ripe avocados, diced

  • 1 small red onion, finely diced

  • 1 jalapeño, seeded and finely chopped (optional, for heat)

  • 1/4 cup fresh cilantro, chopped

  • Juice of 2 limes

  • Salt and pepper, to taste

For the shrimp:

  • 1 lb large shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon chili powder

  • Salt and pepper, to taste

Instructions:

1. Prepare the salsa:

  • In a large bowl, combine the diced mango, avocado, red onion, jalapeño (if using), and fresh cilantro.

  • Squeeze the lime juice over the salsa, gently tossing the ingredients to coat them in the juice. The lime will not only add brightness but also prevent the avocado from browning.

  • Season with salt and pepper to taste. Set the salsa aside while you prepare the shrimp.

2. Season and cook the shrimp:

  • Pat the shrimp dry with paper towels and place them in a bowl. Drizzle with olive oil, then add the smoked paprika, garlic powder, chili powder, salt, and pepper. Toss the shrimp until they are evenly coated with the seasoning.

  • Heat a grill pan or skillet over medium-high heat. Once hot, cook the shrimp for 2-3 minutes on each side until they are pink, opaque, and slightly charred. Be careful not to overcook them, as shrimp can become rubbery if cooked too long.

  • Remove the shrimp from the pan and allow them to cool slightly.

3. Assemble the dish:

  • You can serve the shrimp on top of the mango avocado salsa or gently mix them into the salsa for a fully integrated dish. Either way, make sure you get a bite of all the elements in every mouthful!

  • Garnish with extra cilantro and lime wedges if desired.

4. Serve and enjoy:

  • Eat your Mango Avocado Salsa with Shrimp by itself or serve as a dip with tortilla chips, a topping for tacos, or on a bed of rice for a complete meal. This dish also pairs well with a side of quinoa or a simple green salad.
