Ingredients:
Serves 2
1 pound of ground beef (or ground turkey)
1 cup marinara sauce (look for a low-sugar option for keto)
1½ cup shredded mozzarella cheese
1 cup of sharp cheddar
½ cup grated parmesan cheese
½ cup sliced pepperoni
½ cup sweet peppers
½ cup mushrooms
½ cup black olives
1 tsp Italian seasoning (½ tsp for garnish)
salt and pepper
Instructions:
1. Preheat and Prepare:
Preheat your oven to 400°F (200°C).
Use an oven-safe skillet.
2. Brown the ground beef:
Cook meat for about 10 minutes or until meat is brown, season with salt and pepper.
3. Layer the Cheese, Sauce and Seasoning:
Grate parmesan cheese over the cooked beef in the skillet.
Stir in sharp cheddar cheese with meat mixture.
Spread the marinara sauce evenly across the skillet.
Sprinkle Italian seasoning over the sauce for extra flavor.
3. Add Toppings and Cheese:
Add your favorite toppings, mushrooms, onion, bell peppers or olives. Arrange them evenly over the sauce for the perfect bite in every spoonful.
Sprinkle a layer of shredded mozzarella evenly over the skillet, then add the parmesan for a richer, more layered cheese flavor. Sprinkle the remaining Italian seasoning
4. Bake:
Place the dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown. Add pepperoni about halfway through.
5. Garnish and Serve:
Remove from the oven and let it cool for a few minutes. Top with fresh basil or parsley for an extra touch of flavor and color.
Serve hot and enjoy your crustless pizza straight from the skillet!
Tips and Variations:
I use a veggie chopper to get the vegetables in perfect bite-size pieces allowing you to get all the veggies in each bite.
Make it Meatless: Opt for veggies like spinach, mushrooms, or artichokes for a vegetarian version.
Spice it Up: Add a pinch of red pepper flakes or sliced jalapeños if you like a bit of heat.
